Premium tomato paste is not merely concentrated tomato juice; it is a carefully calibrated structural emulsion of pectin, natural sugars, acids, and water. The heat treatment applied immediately after crushing dictates the paste’s viscosity and color yield.

Cold Break (CB) Processing

Preheating temperatures range between 65°C and 75°C. This preserves the naturally occurring enzymes (pectinmethylesterase and polygalacturonase), which partially break down the fruit's structural pectin. The resulting paste has a lower viscosity but boasts a brighter, more vibrant red color and a stronger fresh-tomato flavor profile. Ideal for retail ketchup and table paste.

Hot Break (HB) Processing

Preheating temperatures spike immediately between 85°C and 95°C. High heat instantly deactivates pectin-degrading enzymes, trapping the long-chain pectin molecules intact. The resulting paste has a very thick, viscous texture (Bostwick reading under 6 cm/30s at 12.5% Brix). Perfect for industrial applications where sauce separation must be minimized.
